The Best Brownie Recipe

Gooey white chocolate brownie recipe with a spiced twist. Exactly what Christmas ordered and fitting in nicely with national brownie day.

Ingredients

185g dark chocolate (70% or more)

185g butter 

3 large eggs

275g golden caster

80g plain flour

20g cocoa powder

1.5 tsp ground ginger 

1.5 tsp ground cinnamon 

109g white chocolate, chopped 

Method

  1. Melt butter and chocolate in bowl over low heat. Leave to cool 

  2. Pre heat oven to 160 degrees fan and line square tin 

  3. Whisk eggs and sugar in mixer until light, fluffy and double in volume. When dropped the mixture should stay on the surface for 1-2 seconds. This step should take about 5-8 mins 

  4. Remove from mixer and hand stir in the melted chocolate using a spatula and fold in figure of 8 pattern so as not to knock out air bubbles

  5. Once combined, add in flour, cocoa powder, ginger and cinnamon using same method as above

  6. Finally add in chopped chocolate and pour into tin 

  7. Bake at 160 degrees fro 20-25 minutes, or until the top looks papery and cracks but you’ve still got a wobble in the middle when you shake the tin

  8. Leave to cool in the tin before cutting
