Gemma’s shakshuka & french toast brunch recipe

French Toast: (Serves 4) 

You’ll need: 

- Brioche bread/sourdough loaf

- 3 eggs

- A splash on milk

- 1⁄2 tsp vanilla extract

- 8 rashers streaky bacon (if veggie delicious without too)

- Banana

- 2 peaches

- Tsp ground cinnamon

- 4 tbsp greek yogurt Honey

- 1 tbsp of caster sugar 


Shakshuka: (Serves 4) 

You’ll need: 

- 2 tins chopped toms

- 1⁄2 onion , chopped

- Clove of garlic, crushed

- A few sprigs of rosemary

- 1⁄2 Avocado, sliced

- 1⁄2 a small pack of coriander, chopped 

- 1⁄2 fresh chilli, finely chopped

- 2 spring onions, chopped

- 4 eggs

- Fresh bread, sliced 


Method: 

1. Firstly, preheat your oven to 200 fan.

2. Then we are going to fry half a chopped onion with 1 crushed clove of garlic in a large saucepan.

3. Add a few sprigs of rosemary and once your onions are soft add your chopped tomatoes. Leave to simmer for a few mins.

4. While you do this mix 3 eggs with a slash of milk and half a teaspoon of vanilla extract. Dunk your brioche slices and heat a pan to a high heat, add a knob of butter and fry slices until golden on each side. 1-2 slices per person.

5. Keep in warm, either covering the fan with foil or keeping in a warming draw or warm oven.

6. Add your eggs to the shakshuka and then bake for 10 mins.

7. While the eggs are baking fry banana and peach slices on a high heat with a knob of butter, ground cinnamon and caster sugar to caramelise the fruit.

8. After 5 mins, plate up french toast with greek yogurt, honey. caramelised fruit and crispy bacon.

9. Take out baked eggs, top with avocado, coriander, fresh chilli and spring onion 

and serve with fresh bread.
